A SAVVY woman has revealed she’s a meal prep queen and has been able to prepare food for the entire week. 

Known as beat the budget online, Mimi Harrison explained she paid under £20 at her local supermarket in order to prep all her meals for the seven-day period.



She started the video by loading her trolley up with the food she would need. 

This included broccoli, a red onion, peppers, lettuce, carrots, pork mince, chicken thighs, rice, courgettes, cheese, chives and lemon. 

Putting everything through the self-checkout till, she revealed the total price of her shop came to £16.97. 

Once she returned home, Mimi got straight to work with her meal prep as she peeled the carrots, chopped them into sticks and put them aside before doing the same to the peppers and courgettes.

Throwing all of it into a pan, she sprinkles some salt before allowing them to soften. 

She then added tomato sauce alongside some cheese and finally a big portion of spaghetti to mix it all into. 

Mimi then placed the meal into five containers before sprinkling some more cheese on top. 

Next, the foodie washed some rice in a bowl to get all the dirt and starch out before putting a tomato-based paste onto her chicken thighs, which had the skin still on it.

Popping these into the air fryer, she then focused her attention back on the rice on the stove before steaming some broccoli. 

After dividing the rice and broccoli into another five glass containers, she put the chicken into each one before adding some of the juice leftover into them. 

TikTok user @beatthebudget's final meal for the week included kale and pork mince, which she cooked on a pan. 

She placed these into deep containers and once served, she added a slice of lemon to go with it all. 

Her efforts landed her with a total of 15 containers full of food, leaving plenty of leftovers. 

“With three pounds to spare,” she wrote in the caption. “LOVED this week’s recipes. I froze half and switched out other meal prep recipes for variety. 

“Delishhhh. Budget club members you know where to go!!” followed by a red heart emoji. 

People were amazed at how much she was able to cook for the amount she paid as one person wrote: “I live in London and I’m convinced it costs me £20 to leave my flat…” 

Another asked: “But do you keep it in the fridge? I don’t think it lasts a week, can’t it go bad”. 

One person replied: “Freeze it and take it out the night before,” alongside a smiling face emoji. 

A third posted: “This is actually so impressive”. 

While a fourth added: “The way my jaw dropped when I saw the total £16.97,” alongside two crying emojis.
